When I went to college, I lived with my mom and dad. When I graduated, I still stayed with them because I worked just a few miles away. However, when I was hired on as a high school teacher in Silver Spring, Maryland, I knew that it was time to cut the apron strings. I was given a very generous starting wage, plus I had some money saved up since I was living with my folks. That meant that when I looked at Silver Spring apartments for rent, I did not have to look at just ones that offered very little other than a place to stay.

I am not spoiled, but I am also not the type to sit in my apartment and watch TV all night either. I wanted to live in a place where there were social things going on. When I first saw the Ashford apartment that I am now in, I knew that it was the one that I wanted to get. There were a lot of different floor plans, and I got the one bedroom unit that has a den. I had no idea if I would even need a den, but I liked the idea of having one anyway.

I also liked the things available for everyone there. The swimming pool is huge, and the fitness center is second to none. I am able to get a good workout in both, and I have actually gotten in better shape in the short time I have been here. I never have a problem with parking, and work is only about six minutes away. That gives me plenty of time to just enjoy life when I am not working since I don’t have a long commute. I thought it would be hard being on my own, but I am loving every minute of it!

Our Old Central Air System Still Had a Lot of Life in It

It can get pretty hot here in Sacramento during the summer. I thought that I would enjoy the heat when I first moved here. For the most part, I do, but there are days where it is just too humid to even want to step outside. The house my wife and I had bought has central air conditioning, and it feels so refreshing on those humid days. When it stopped blowing out cold air a few months ago, I knew I needed to get a company that does appliance repair in Sacramento to come out and take a look at it.

I did not want to try and fix it myself because I figured it was going to be long and involved. I wasn’t sure I even had the tools to do it. My wife joked that I might not have the knowledge to do it either, but she could be right with that! Rather than mess with something that I could possibly make worse, I just hired a serviceman to come out and take a look at it. (more…)

We Had the Freedom to Move Anywhere and Chose Tennessee

We liked traveling through Tennessee when we were going to Georgia to visit friends. We took a route to do some sightseeing. We liked the look of the Smoky Mountains, and we saw there were Antioch apartments for rent when we drove through that part on the way back. There was nothing holding us to where we lived. We now worked online jobs, and we only needed a computer and an Internet connection to earn a living. The work was tedious, to say the least, but it gave us a freedom to choose to go anywhere that our income would allow us to live.

We had been wanting to move south, but we were not sure how far we wanted to go. We figured Tennessee would be a good spot. It would not be as hot as Florida in the summer, and it would not be as cold as Pennsylvania in the winter. A thin pancake made with rice batter. Appam

Ingredients
2 cups cleaned, raw rice soaked for 4-5 hours
2 cups fresh tender coconut shavings
1 cup boiled rice
1 cup fresh coconut milk
2 nos. ready to eat banana
Salt and sugar to taste
A pinch of yeast granules dissolved in little hot water

Method
Drain the soaked rice and grind it along with tender coconut, pealed bananas and cooked rice to make a fine thick batter. Do not add too much water. Add yeast, mix lightly. Also add salt and sugar to taste. Allow to ferment at room temperature for at least 6 hours. Heat a small non-stick wok. Pour approximately half a cup of the batter and gently swirl the pan around such that only a thin layer of the batter covers the sides and a thick layer collects at the bottom. Cover with a lid and cook on medium heat for about 3 minutes or till the edges have become golden crisp and the centre is soft and spongy. Serve hot with any south Indian curry.

Vegetable Malabar Curry
A hot and spicy dish prepared with curry leaves, spices and coconut cream which combines well with rice or bread. Malabar Curry

Ingredients
100 gms Boiled Carrots
100 gms Boiled Beans
100 gms Boiled Cauliflower
100 gms Boiled Potatoes
100 gms Cottage cheese (optional)
1 tbsp coconut oil
1 tbsp Ghee
5 whole green cardamom pods
5-6 Cloves
2 large cinnamon sticks
2 large onions, finely chopped
1 tbsp ginger garlic paste
2 green chilies shredded
2 ripe tomatoes, pureed
Bunch of curry leaves
2 tbsp coriander powder
1/4 tbsp turmeric powder
1 tbsp red chili powder
1 tbsp Mustard
4 cups coconut milk
2 tbsp coconut cream
Salt as per taste

Method
Heat coconut oil and ghee in a wok and add cinnamon, cardamom and cloves. Once they start spluttering, add chopped onions and fry till golden brown in color. Add the ginger garlic paste, green chilies and curry leaves and fry for some more time. Add tomato puree and mix well. After 2 minutes, add coriander, turmeric and red chili powder and salt and saut till you see oil separating over the mixture. Add the boiled vegetables to the mixture and stir for two minutes. Add coconut milk and boil on low heat for five minutes. Stir in the coconut cream and serve hot.
